Stony Brook University has leased the commercial kitchen in the Student Center of its Southampton campus to the Amagansett Food Institute (AFI), which will operate the space as a business incubator called South Fork Kitchens.
“Food incubators” provide local food businesses, including farms, with access to a commercial kitchen as well as business planning and development services. The site also provides storage space for ingredients, finished products and an on-site chef to process produce for added value. A farm to table café will provide food for students, staff and campus visitors while educating guests on the benefits and challenges of eating locally and in season.
This AFI facility will be open full-time, and available to clients for around the clock. Certified by the New York State Department of Agriculture and Markets, it meets all state and local regulations.
